The Secret of Palermo Brought to Light in Mons
La Collégiale – La Grande Liqueur reimagines an 11th-century Benedictine elixir, designed to invigorate, soothe, and delight.
The result of historical, botanical, and monastic research, it recreates the taste and aromas of ancestral knowledge. In Palermo, Muslims, Byzantines, and Latins shared their knowledge and traditions, giving rise to monastic elixirs for travelers and knights. Maison Sicile recreated this forgotten elixir using 33 plants, roots, barks, and resins, enhanced with honey, cane sugar, and saffron to create a powerful yet balanced liqueur.
Its name, La Collégiale, is first and foremost a tribute to the spirit of the word itself. But it also, naturally, carries a subtle echo of the Collégiale Sainte-Waudru, which for us, the children of Mons, embodies elevation, memory, and the passing down of traditions.
EXCEPTIONAL TASTING
- Color: bright golden yellow
- Nose: complex, with notes of chamomile, clove, saffron, and honey
- Palate: smooth and velvety despite its 49% ABV, with notes of honey, licorice, candied citrus, medicinal herbs, and warm spices

How to serve
La Collégiale reveals its full aromatic richness at temperatures between 6 and 10°C. Serve it slightly chilled, neat, or on the rocks to fully appreciate the balance of its herbal and root infusions. It also makes an elegant addition to sophisticated cocktails, such as when mixed with a quality tonic and a twist of lemon.

La Collégiale is a rich and versatile liqueur that’s perfect for both enjoying on its own and sharing with others.
It pairs naturally with desserts such as chocolate, pastries, or fruit, but also offers delightful surprises when served with aged cheeses or dishes with spicy notes.

What immediately appealed to me about La Collégiale, Mons’s famous liqueur, was the subtlety of its infusion of herbs and roots. The balance is remarkable, particularly in terms of sweetness, which is perfectly controlled. It’s an elegant liqueur, a pleasure to savor… and one I’m proud to offer at my establishment.
