Pairing: Marvelous Marsala Vergine is ideal for closing the meal and competing with more alcoholic spirits. This Marsala has a complex and assertive character that makes it a good match for old cheeses, oysters, foie gras, bottarga and braised meats. Marvelous Marsala Vergine is also an excellent "meditation wine" very pleasant at the end of a meal, alone or with others, to make up for the world.
The Marvelous Marsala Vergine is characterized by a longer aging and a simpler fortification, only the alcohol is added to the base wine. Aging then begins in large oak barrels that are never completely filled to allow for the development of the characteristic oxidative aging.
